No Sugar, No Gluten, No Dairy…Oh, MY!

The title of this post about sums up this past week for me.  My new diet way of living prohibits me from eating gluten, sugar, dairy, soy, fruit, and even some vegetables.  For someone who LOVES food….no, “love” doesn’t even come close to describing the way I feel about food.  I cherish food and look forward to each meal.  So why, you might ask, am I eliminating so many yummy items from my diet? 

When we discovered that Lyla had so many food allergies, I was overwhelmed with what to feed her.  In addition, I had a gut feeling that there was something more going on with her health (she had anemia at 9 months, her gross motor skills were behind, etc.).  After much prayer I came upon Carrie Thienes’ blog one day.  She was talking about the foods we should be feeding our infants and how many young children with imbalances could be cured through their diet and supplementation.  Long story short, I contacted Carrie and she officially became Lyla’s natural nutritionist. 

After completing a hair sample, we discovered that Lyla had copper toxicity as well as many imbalances.  Her whacky levels were no doubt causing all of her issues.  Carrie assured me that focusing on her diet and health at such a young age would set Lyla up for a very strong immune system as well as her overall well-being.  After seeing the amazing results with Lyla, I decided it was Mommy’s turn to get tested.

Not to my surprise, I had INSANE levels.  Copper toxicity, as well as low sodium and low potassium (my ratios were off the charts) were causing me a lot of issues.  I’m not ashamed to say that I’ve struggled with depression and anxiety on and off the past year or so.  The results from my hair analysis showed that there is a reason for my highs and lows.  They also are causing fatigue and multiple other symptoms I won’t bore you with.  Because of my insane levels, there are certain foods I should avoid at all costs (gluten and sugar) and there are other foods I will avoid until everything levels back out (dairy, some fruit, certain veggies, etc.).  In addition, I am taking SEVERAL supplements in an effort to detoxify my system (mainly the copper stored up in my organs). 

This has been a really hard week for me.  I CRAVE sugar and gluten-laden deliciousness.  I would kill for a loaf of honey wheat bread with some honey butter.  UGH!  However, I know that this is what I need to do for my health (physical and mental). 

Will you hold me accountable?  I’m going to post about my progress, share recipes, etc. each week.  Carrie said I’ll feel worse before I feel better (from the detoxing).  So, I’ll probably vent to you as well!  Are you excited?  I am.

One final note:  I would encourage each of you to check out Carrie’s blog and read about some of these health issues that so often get overlooked or have a pill thrown at them.  Many times we want a quick fix and aren’t willing to dig deep to discover the underlying issue.

    wow sarah, is this “diet” :) likey permanent? it sounded like it was just a detox at first but then the last paragraph made me wonder.. what in the world made your copper levels high and how did she even think to test for that? i work at a family practice office and havent seen labs/ testing for that once in 5 yrs! just lead, no other heavy metals. i look forward to hearing about your journey and hopefully your recovery :)

      Hey Summer! No, it’s not permanent. However, I will probably try to eliminate gluten and sugar indefinitely. As far as the copper toxicity, there are certain rations that indicate a copper toxicity. Also, “slow oxidizers” (such as myself) tend to have a higher amount of copper in their system.     Wow, very over whelming and informative story you have. My friend has been dieting for almost 2 months, and removing gluten in here diet is the best one even he doesn’t have celiac disease or gluten.
