Veggie Fried Rice

I am currently in a rice comatose state.  My belly is full of yumminess.  I’d like to share this super easy recipe with you.

Here’s your list of ingredients:

  • 1 cup of brown rice
  • 1/2 large white onion
  • frozen bag of mixed veggies
  • frozen bag of brocolli
  • any other veggie you’d like to add (cabbage, etc.)
  • 3-4 eggs
  • soy sauce
  • garlic powder
  • chicken or any other meat (optional)

 

Follow the directions on the box (or bag) of rice.  In the meantime, chop your onion and sautee it.  If you’re going to cook chicken or some other meat, get that started, too.  I cooked chicken.  I wanted to grill out, but since the weather wasn’t cooperating I opted for the indoor grill.DSC_0128DSC_0129DSC_0133

Once your onion is browned, add in your mixed veggies.  Stir until well heated.  Once your rice is done, you just add it to your skillet of veggies.  Add in garlic and soy sauce (I use gluten free soy sauce) and stir well.  Scramble 3-4 eggs and add them to your mixture. Don’t forget to add some chopped green onion to the top of your rice before serving.DSC_0134DSC_0138
